Artichoke
Enjoy this delicious and nutritious Artichoke! This yummy appetizer is low in fat while rich in fiber, vitamins, minerals, and antioxidants. Here's how to prepare, cook, and eat them.
Ingredients
- 1 Large Artichoke
- 1 Lemon
- 2 Garlic cloves
- 2 tbsp Olive oil
- 1 pinch Salt to taste
Instructions
- Rinse the artichoke under running water and pat it dry.
- Cut off the stem and about 1 inch of the top of the artichoke. Use a pair of kitchen scissors to trim the sharp tips of the remaining leaves.
- Cut a lemon in half and rub the cut side all over the artichoke, squeezing some juice into the center.
- Peel and thinly slice the garlic cloves.
- Place the garlic slices and 2 tablespoons of olive oil into the center of the artichoke.
- Sprinkle salt on top of the artichoke.
- Place the artichoke in a pot and boil for 30-45 minutes, or until the outer leaves can be easily pulled off
- To eat, pull off one leaf at a time and scrape the fleshy part off with your teeth.
- When the outer leaves are all gone, use a spoon to scoop out the fuzzy choke and discard it.
- The remaining heart is the prized part of the artichoke. Slice it up and enjoy it with a drizzle of olive oil and lemon juice, or your favorite dipping sauce.
