Ingredients

  • 6 oz Penne Pasta
  • 1 bunch Asparagus, trimmed
  • 1 pint Cherry tomatoes
  • 2 tbsp Olive oil
  • 2 cloves Garlic, chopped
  • 2 tbsp Parmesan cheese
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 400°F.
  • Cook pasta according to package directions. Drain and set aside.
  • In a large mixing bowl, combine the chopped asparagus, cherry tomatoes, olive oil, chopped garlic, salt and pepper. Toss to coat evenly.
  • Spread the vegetables out on a baking sheet and roast in the preheated oven for about 15-20 minutes, or until the vegetables are tender.

  • Serve hot with grated Parmesan cheese, if desired.
