Vegetarian Falafel Wrap
Ingredients
- 1 small avocado
- 1/2 cup shredded carrots
- 4 tbsp hummus
- 1 medium tomato
- 4 pieces Falafels (frozen and precooked) I use the Traders Joes's frozen and precooked Falafels.
- 2 pieces Lavash flatbread Option is to use tortilla or pita bread.
- 4 tbsp pickled turnips See note for recipe. This is an optional ingredient that adds a delicious tangy flavor and nice crunch to the wrap.
Instructions
- Preheat Air Fryer to 400 degrees. Place frozen falafels in Air Fryer and cook for 5-7 minutes.
- In the meantime, spread the hummus evenly on the lavash bread.
- Add sliced avocado, shredded carrots, pickled turnips, and tomato slices to the center of the bread.
- Remove the falafels from the air fryer when crisp and cut them in half.
- Place 4 falafel halves on each bread. It's time to wrap up the bread and enjoy!
- Accompany with your favorite fruit for a sweet finish!
Notes
- Place turnips in a mason jar and set aside.
- In a small saucepan, combine the remaining ingredients. Bring mixture to a gentle simmer over medium heat, then carefully pour the mixture into the jar over the turnips.
- Let the pickled turnips cool to room temperature and cover the jar and place in the refrigerator.
- Pickled turnips can be stored in the refrigerator for up to 2 weeks.
