Easy Tomato, Cucumber, Avocado and Mozzarella Salad
This recipe combines the freshness of tomatoes, the crunch of cucumbers, the creaminess of avocado, and the irresistible taste of mozzarella.
Ingredients
- 10 cherry tomatoes, halved
- 1 Persian cucumber
- 1/4 red onion, thinly sliced
- 1/2 cup mozzarella cheese balls
- 1/2 avocado, diced
For the Dressing
- salt and pepper to taste
- 2 tbsp light salad dressing I used Girard's champagne light dressing
Instructions
- In a large salad bowl, combine the cherry tomatoes, Persian cucumber, red onion, mozzarella cheese, and diced avocado.
- Pour the dressing over the salad ingredients and gently toss until everything is well coated. Add salt and pepper to taste.
- Allow the salad to sit for a few minutes to let the flavors meld together.
- Serve and enjoy this refreshing and healthy salad!
