- 1/4 cup red onion diced
- 2 stalks celery chopped
- 1/3 cup shredded carrots chopped
- 1/4 cup roasted red pepper chopped
- 1/4 cup dill pickles chopped
- 1/4 cup light mayonnaise vegan or regular
- 2 tsp dijon mustard
- 1/4 tsp dried dill
- 3 tbsp roasted sunflower seeds
- salt and pepper to taste
For the Sandwich
- 8 slices multigrain bread
- 1 tomato sliced
- 1 avocado sliced
- 1/4 cup dill pickles sliced
- 1/4 cup Sweet and Spicy Jalapenos optional from Trader Joes

- 4 tbsp Hummus
- 4 tbsp Dijon Mustard
