Hey there! Have you ever heard of flummery? It’s a unique dessert that was quite popular in Britain and Ireland during the 17th to 19th centuries. This sweet, soft pudding is made from starch and has a semi-set texture. Fun fact: Queen Elizabeth was said to be a big fan of flummery and enjoyed it during her tea time. Intrigued by its history, I decided to give it a try myself and used fresh boysenberries from my garden. Let me tell you, it did not disappoint! Boysenberry Flummery Dessert
Ingredients
- 1 cup fresh boysenberries plus a few more for garnish
- 2 cups water
- 1/4 cup sugar
- 1/4 cup cornstarch
- 1/2 tsp vanilla
- Whipped cream, for topping (optional)
- 6 leaves mint for garnish (optional)
Instructions
- Rinse and drain the boysenberries. Place them in a saucepan with 1 cup of water and bring to a boil. Reduce the heat and let simmer for 10 minutes
- Strain the boysenberry mixture through a fine mesh sieve, pressing the berries to extract as much juice as possible. Discard the solids.
- In a separate bowl, mix the cornstarch and sugar together. Add the remaining 1 cup of water and stir until the mixture is smooth.
- Add the boysenberry juice to the cornstarch mixture and whisk until everything is combined.
- Cook the mixture over medium heat, stirring constantly, until it thickens and comes to a boil. Keep stirring for an additional 2-3 minutes until the mixture becomes very thick
- Remove the pan from the heat and stir in the vanilla extract.
- Pour the mixture into individual dessert cups and let cool to room temperature.
- Once cool, chill the dessert in the refrigerator for at least an hour, or until it is firm.
- Top with whipped cream, if desired, and serve cold.
