  • Air Fryer

Ingredients

  • 2 portobello mushrooms tops stem removed, cleaned and dried
  • 1 tbsp butter melted
  • 4 cloves garlic minced
  • 1 tbsp olive oil
  • 3/4 cup cherry tomatoes sliced in half
  • 1/2 cheese, shredded
  • 3-4 leaves fresh basil chopped
  • salt and pepper to taste
  • balsamic glaze

Instructions

  • Melt the butter, then mix in the 3 cloves of minced garlic. Gently coat all sides of the mushroom caps with the garlic butter mixture.
  • Mix together one clove of minced garlic, olive oil, and sliced tomatoes until thoroughly combined.
  • Fill each mushroom with the shredded cheese and tomato mixture, and Air Fry until cheese has melted and golden in color. (about 10 minutes).
  • To serve, top with the basil, drizzle with the balsamic glaze and sprinkle with salt to taste.
  • Enjoy your healthy and delicious stuffed mushrooms!

Notes

Thoroughly pat dry portobellos with paper towel before brushing with the butter so they don’t release too much water or liquid while cooking.
In this recipe, I opted for Gruyere cheese, but feel free to use your preferred cheese of choice.
