Lemon Garlic Kale Salad with Apples and Cranberries
Ingredients
- 1/2 cup pine nuts or sliced almonds, pumpkin seeds, sunflower seeds
- 1/2 cup freshly squeezed lemon juice about 3 lemons
- 1/2 cup olive oil
- 5 cloves garlic crushed flat with the side of a knife, peeled and left whole
- 10 ounces kale leaves washed and dried, stems removed
- 1/3 cup parmesan cheese grated
- 1/3 cup dried cranberries
- 1/2 green apple, diced preferably a granny smith apple
- 1 tsp salt
Instructions
- In a small bowl, combine lemon juice and salt. Slowly whisk in olive oil. Next, add garlic cloves and set aside.
- Remove stems and stack leaves together, roll tight and thinly slice the leaves.
- Placed chopped kale in a large bowl. Sprinkle with nuts, parmesan cheese, apples, and cranberries.
- Remove garlic cloves from dressing and discard. Pour 1/2 the dressing over the salad and toss. Add more dressing if needed and save the remaining dressing in the refrigerator for up to 5 days.
- Serve alone or with your favorite protein. Enjoy!
