Equipment
- 1 Cupcake pan
Ingredients
- 1 cup oats I used Coach's Oats
- 1/4 cup almond flour
- 1 cup peanut butter
- 1 tsp vanilla
- 1/2 tsp salt
Chocolate Topping
- 1/3 cup chocolate chips
- 2 Tbsp peanut butter
- flaky salt
Instructions
- Mix together the oats, almond flour, and peanut butter, honey, vanilla and salt in a medium bowl.
- Place cupcake liners in a muffin pan.
- Transfer mixture to muffin pan and evenly place in 12 slots. Flatten mixture for best results.
- Freeze tray for 1 hour.
Chocolate topping
- In a small pot over low heat, melt chocolate chips and peanut butter, stirring constantly until smooth and melted.
- Remove muffin tray from freezer and evenly distribute chocolate topping on to each peanut butter bite.
- Sprinkle with flaky salt and freeze for 30 minutes.
- Enjoy!
Notes
It’s recommended to store the Peanut Butter Oat Bites in the the freezer and take them out when you’re ready to eat them. Enjoy!
